Random Beer Tips
Tip 26: Autolysis is a process by which yeast cells begin destroying themselves (literally by digesting themselves). This process causes undesireable flavors/aromas (yeasty, brothy, meaty, fatty, soapy, or rubbery). This is triggered by too much salt in the beer, or allowing the beer to sit on the yeast bed (in the bottom of the fermenter) for too long.
