Along with spruce beers, birch and maple beers
were brewed by early American colonists as a substitute for
barley beers. The sap used for brewing was taken from sugar
maple tree.

Heat the water and dissolve the maple syrup
in the water.

Cool the mixture to 70ºF, pour into a
fermenter, pitch the yeast and ferment thoroughly.

Prime, bottle and condition for 1 week
before drinking.
